The tomatoes are harvested in July, August and September and processed in such a way as to preserve their taste, aroma and nutritional value. After sorting and washing, the skin of the tomatoes is removed by steam; only then are the tomatoes finely chopped, pureed and boiled down. Alce Nero's strained organic tomatoes are produced without any additives and are not salted.
